The only thing I see that is of decent value is the making of apple pie. THAT is a survival necessity.

...But all you can do with it is stab people with a foil, and what fun is there in THAT? I mean, at least people could take up shooting or MMA. /That/ has practical value...

No ,no, no, my friend! I fence SABRE. Completely different animal. There is only one deliberate stab in sabre, a counter attack called "point line." The rest is done with the edge. Cuts ans slashes. As a matter of fact, the cuts and parrys in sabre are the same as with a two-edged sword (shortsword, longsword, broadsword.....). The only difference being bigger swings do to more weight. Sabre is the fastest and most aggressive form of modern fencing.
And as for the toad-stickers (foil), they are used in the way of rapiers and smallswords. Though they were not sharpened at the edges rapiers and smallswords could still cut somewhat, however they only thrust in modern foil as that is where the real damage is. And it is a lot harder than it looks. I know because Methodical and I have been teaching each other moves (rubs bruised ribs).
And for practical value, though modern society has abandoned the noble art of sword-play, it teaches speed, agility, reaction, and A LOT of coordination.
Now, do all that in in uniform! That would be your shirt which is one layer, a thick plastron, kind of a double layered one-armed half-shirt (that makes three layers), a double-layered canvas jacket (we're at five layers), and a metalic lame --- another two layers. That equals about seven layers, plus double-layered canvas nickers, thick padded glove, and stifling hot mask. And some competitions don't have good AC. That, my friend, would be endurance.
So, yes. Fencing has A LOT of practical value.

... You can get the same practical value from tai-chi and MMA, which also has the added advantage of usage in every day life. Get beat up at school? You're not going to have a rapier on you if you get jumped.

first, you dont make fun of people that fence, for the same reason you dont make fun of people that take tai-chi and MMA, they can kill you.
oh and if I was at school and was about to get beat up, yes I would not have a rapier. oh no if only I had something pointy, oh ya I do. It's called a pen.
the pen has been proven to be able to kill if you have the right skill's. It would not be my first chioce but atleast I wont be like "um...watch out I know Tai chi".

Or you could grab a broom, or any long object really, to strike at them with wile using the skills learned in fencing to stay out of their way.
